REPUBLIKA.CO.ID, MALANG – Food Science and Technology Lecturer (ITP), University of Muhammadiyah Malang (UMM), Elfi Anis, has successfully created analog rice for small children. This innovation was confirmed by the launch of Elviza's label of rice products recently.
Elviza explained that the idea of creating rice innovation was the result of the nutritional nutrition and nutritional nutrition number of nutrition victims in the children that continued to increase. Based on data compiled by the Ministry of Health Data and Information Center (PDI) 2015, as many as 25 percent of infants' babies in Indonesia are experiencing stunting. "And other health problems due to low nutritional quality," said Elfi.
In addition, the PDI also shows that 30 per cent of under-fives in Indonesia experience less protein calories (CTF). As is known, small children have a number of problems during one of the growth periods, one of them is the CTF.
Leaving from this problem, Elfi is innovating with high protein rice analogs. He experimented with analog rice made of tapioca flour, soybean and green and red spinach. An analogous rice that makes it rich in protein because it is produced from beans such as soybeans.
"This analog rice contains a high protein soybean meal that means that this rice does not only contain carbohydrates," said Elfi.
According to the lecturer who is active in conducting research in the scope of this pigment, analog rice has labeled Elviza's other advantage, high antioxidant levels. Antioxidants, explain Elfi, are constituents that can improve the immune system in the human body. This is very beneficial for small children during the growth period.
"Experiences in this study have proved that antioxidant levels are very high," he added through official information received Republika.co.id, Thursday (11/22).
Meanwhile, in analogue rice, Elfi chooses pigments that have been included in vegetables. Vegetables are chosen as many toddlers tend to use less vegetables.
In addition, Elfi admitted, analog rice not only includes carbohydrates and protein, but also other healthy ingredients in vegetables. "I chose spinach as an additional composition to make use of the pigment in the spinach itself," he explained.
Not only was the innovation of touch rice, Elfi had also experimented with antioxidant beverages that used rose pigments. It is known that antocyanins of roses prevent kidney disease and also liver. Results of the research have been published in international magazines and have been patented.
According to Elfi, these products are shown to provide healthy food for the community. Then also to reduce the use of non-food hazardous colors, such as Rhodamin B, Amaranth, and Pauncou. Therefore, Elfi also produces a downstream downstream antioxidant product with Elviza label.
As well as Elviza, Elfi also develops natural coloring products with a variety of indigenous colors of Indonesia's natural ingredients. "My natural coloring products are being developed to meet the demands of batik entrepreneurs exporting from Medan owned by batik businesses in Malang," added Elfi.
In terms of a number of innovations, Elfi assessed that current pigments of natural materials in Indonesia have experienced a high potential to use.
